Ruby County Butchers is a family-run, sustainable farm and butchery centrally located on the border between Devon and Cornwall. The butchery holds a five-star hygiene rating, from which we’re proud to sell grass-fed beef – reared on our beautiful farm, Kempthorne – and locally-sourced free-range meat to our customers.

The team behind Ruby County Butchers

Tom, Annabelle and their two boys live and farm at Kempthorne, part of the Tetcott Estate. Tom first started at Kempthorne as the farm manager for the previous tenant farmer. In late 2019, when the previous tenant, who had farmed for 30 years, wanted to retire, Tom and Annabelle were given the opportunity to take on the business farm tenancy.

 Prior to this, Tom and Annabelle had several years of experience with rearing their own beef and sheep at their home farm in Devon. Before farming for himself, Tom had also gained experience by studying Agriculture at Harper Adams University. As well as this, he spent several years working for farmers all across the country and even in New Zealand. Altogether, Tom and Annabelle’s combined experiences enabled them to take on Kempthorne.

Annabelle’s brother, Tristan, owns and runs the butchery, which is located on the farm. After starting as a butcher’s apprentice and, then, working as a butcher in other butcheries, Tristan decided to set up his own business, Ruby County Butchers, when Tom and Annabelle took over the farm tenancy. He has now been running the business since 2018, working alongside Annabelle who helps him with the day-to-day running of it.

ABout our produce

At Kempthorne now, Tom and Annabelle run a suckler herd, consisting of 60 breeding females and their young stock. This is made up of mostly Ruby Red Devon cows, or the renowned Devon X, as well as a small flock of Charollais sheep, in which they plan to increase this stock in the coming years.

Our produce ranges from minced and diced beef, to sausages, bacon, rolled belly pork, beef burgers, whole chickens and more! What is important to us is that we farm these products in a sustainable and regenerative way, so we give back to the environment, not take away from it. This means there’s minimal use of chemicals, like fertilisers and sprays, at Kempthorne. Instead, we prefer a grass-based system, which sequesters a lot of carbon and helps us offset our emissions.

All of our stock, whether that’s our sheep or cows, are taken from birth to finishing on the farm. They are all finished on the grass-based system, with no artificial feed bought in. We select our breeding females to keep and anything not kept is finished through the butchery.
